Boil water in a saucepan and add maple syrup, brandy, cardamom pods, and cinnamon stick into the water. Let it cook for 5-10 minutes.

Adjust the pears in a saucepan in a standing position so that they are dipped in the mixture properly. Adjust the stove heat to medium and let the pears cook for at least 15 minutes.

Turn the heat off and set the saucepan aside to cool down. Let pears stay in poaching liquid and let them stay overnight in the fridge.

Take another bowl and add olive oil, vinegar, poaching liquid, mustard, salt, and black pepper and whisk them all together.

Take out the pears and slice them in half. Size of slices can depend on your choice. You can either put a whole half slice in the plate or separate long thin slices of ear or mix into the dressing syrup.
