- 2 Onions
- 2 tbsp Vegetable oil
- 2 inches Fresh Ginger
- 1 bunch Coriander
- 3 tbsp Jerk Seasoning

- 6 cup Vegetable Stock
- 1 kg Sweet Potatoes
- 2 cans (400 grams) Black Beans
- 450 g jar Red pepperroasted

Heat the pan with some oil and soften one chopped onion until it turns brown.
Take a bowl and mix the other onion, chopped roughly, along with ginger, coriander, and jerk seasoning with a hand-held blender. Once mixed, pour everything into the softened onions pan.
Add in the chopped tomatoes, vinegar, sugar, beans, and peppers and cook them for five to six minutes until they get fully-cooked.
Add the sweet potatoes and cook for a few more minutes.
Finally, add the soup stock and let the whole mixture cook until potatoes become soft.
Take out in a fancy bowl and garnish with coriander, cucumbers, or avocado. Enjoy!
